The Hungry Elephant

There are many ways to spice up your quinoa but this is my favourite (so far!)

What you’ll need:

1/2 cup cooked quinoa
1 avocado
1 tomato diced
1 pepper (red, yellow green or mix it up!) diced
2 tbsp balsamic vinegar

Throw some of that cooked quinoa into a bowl and all the rest of the ingredients! Add more balsamic vinegar if you need it.

THIS WON’T DISAPPOINT! (unless you dislike one of the ingredients.. then yes, you will be disappointed)
