The Hungry Elephant

So, because I work a good hour away from my home – I have quite the time to think about stuff as I drive (or get stuck in Toronto traffic).. Yesterday, it took me about all of 30 seconds to come up with this DELICIOUS dessert. Then for the remaining 59 minutes, all I could think of was this NO BAKE MUG CAKE!!

Now, the mugs that I used for this are quite large. You don’t have to use that size. Also, i have tons of leftovers as well, so you can even go BIGGER if you want!

What you’ll need:

  • 1 mug
  • 3 sponge cakes
  • 1 package of jello instant pudding
  • 2 cups milk
  • 1/2 cup marscapone cheese
  • 1/2 cup whipping cream
  • 1 tablespoon vanilla extract
  • 4 teaspoons sugar

In a bowl, mix marscapone, vanilla, whipping cream & sugar.
Mix with a mixer at medium until it forms tough peaks (consistency of whipped cream)
In another bowl, mix instant pudding with the cups of milk thats on the package (usually 2 cups)
whisk until powder dissolves
Put sponge cake in the bottom of the mug
Fill about an inch with pudding
Add another sponge cake
Add some of the marscapone mix
add another spong cake..
Top with pudding
Refridgerate 30 mins
Top with whipped cream (optional!)
