The Hungry Elephant

This easy sweet potato black bean burger recipe is AH-MAZING… PLUS it’s vegan!

Spring is here, the weathers getting warmer and it’s time to bust out the BBQ!

What you’ll need:

  • 1 can black beans
  • 1 cup whole grain rice (can be subbed for quinoa or 1 egg with panko)
  • 2 sweet potatoes cooked
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • salt and pepper to taste
  • chilli flakes or chipotle seasoning

First pierce the sweet potatoes and put them in the microwave until they are tender and you can stick the fork the whole way through with ease.

While those cook, drain a can of black beans and then mash them in a bowl. Add in 1 cup of cooked rice. I used whole wheat.
Mash again!!!!

Time to add the spices, i used paprika, cumin and chilli flakes but you can use chipotle seasoning or skip it if you don’t want a little kick.

Once the sweet potatoes are done, cut in half and scoop out the insides. Put that in the rice/bean mix and MASH some more!

When that’s all done and mashed together, take a chunk and form a ball.. then smush that ball into a pattie. It may be a bit hard to handle but it will be better once you get it on the BBQ.

You COULD also bake them, but if it’s nice out, why not BBQ. Throw those patties on the bbq and wait until they are nice and brown before flipping them over. They’ll be so crispy and delicious once they are done.

I topped mine with avocado and some ranch sauce (which isn’t vegan) but you can top yours with whatever you want!
