The Hungry Elephant

HOLY CRAP. I cant BELIEVE how good this was. My last try at pizza turned out HORRIBLE, but this was AMAZING. I think my use of capital letters proves that.

Try it for yourself, I DARE YOU!

What you’ll need:


2 1/2 cups whole wheat flour
1 Tablespoon Olive Oil
1 Tablespoon Honey
1 1/2 packets of dry yeast
1 cup warm water
1 teaspoon salt

Pizza Toppings:

1 1/2 yellow onions cut up
3 flame roasted peppers chopped
Cherry Tomatoes chopped
3 jalapeno peppers chopped up
1 tablespoon brown sugar
bacon bits
1 teaspoon butter
1 small can of tomato paste
Goat/feta cheese

Mix oil, honey, yeast, and water into a bowl. Let it sit for 10-15 minutes. Add in 2 cups of flour and mix until a dough is formed. Add in the 1/2 cup of flour and knead into the dough. Form into a ball and rub a little olive oil around the ball of dough. Put back into a bowl, cover with seran wrap and then cover with a towel. Leave for 1 hour.

While the dough is rising, half an hour before its ready, caramelize the onions in the butter. Add in a little white sugar to make it caramelize faster. Once brown, add in about a handful of bacon bits. Top with the brown sugar and saute for another 5 minutes, turn off the burner and let it sit.

When the dough has rised use your hands or a roller and roll into a flat circular shape. You may have to shape it in the pizza pan.
Spread the tomato paste over the dough. Add the onion mixture and spread around evenly. Add the cherry tomatoes, peppers, jalapeno peppers and cheese.

Bake at 375 for 30 minutes or until browned.
