These pierogies (aka polish dumplings) are one of the best I’ve had. This video not only teaches you about making pieorgies, but also cooking them too and includes the pierogi dough recipe.
So here is how to make pierogies from scratch!
The pierogi dough is probably the hardest part, but its fairly easy.
In a bowl, mix 2 cups flour, 1 egg, 1/2 cup water, salt and 2 teaspoons of olive oil. Mix and add in some more flour as you knead.
once it’s kneaded fairly well, set aside for half an hour.
In the meantime, bake a potato in the microwave.. then scoop out the insides. Mix with a brick of cream cheese and 2 japalenos – chopped.. add in some mix to make it a bit creamy.
Roll out the dough, so its really thin. Take a glass and make some circle cut outs. put in a small spoonful of the potato mixture. Dip your finger in some water and run it along the outside of the circle of dough – it will help seal it.
Close the pierogi and run your fork along the side so seal it more.
Once you’ve made all of them, boil some water. Drop in the pierogies. They will be done once they start floating.
Once they are done cooking, you can either freeze them for later or saute them in some butter.
