I gotta admit, I do enjoy a cheesecake now and then. However, I find them WAY to sweet and can only have a small slice.. Yesterday, I was in one of those cheesecake moods and decided to make them into cake pops instead so that you can get just enough without out-sweetening yourself.
The best thing about these are they are ‘no bake’! So after making the ‘cake’ all you need to do is pop it in the freezer for an hour until it’s firm enough to handle.
Here’s what you’ll need to make ‘no bake cheesecake truffle pops’
Combine the cream cheese and vanilla into a bowl.. Mix on medium until smooth, slowly add in the graham crackers while mixing, then the sugar. Beat until smooth.
Freeze for about an hour or until firm enough to handle.
Roll about a teaspoon of dough into balls.. You can either eat them like this.. OR decorate with melted chocolate, coconut, graham crumbs, sprinkles etc. Whatever you want!
