Zucchini Alfredo in one pot!

I recently bought a spiralizer for making some vegetable pasta and used it for the first time with zucchini alfredo in one pot! The best thing about this meal is, not only is it cooked in one pot, but it’s also healthy and tastes exactly like alfredo sauce from the store! A definite plus is that it doesn’t make you full like grain pasta.

Here’s what you’ll need.

  • 4 zucchini & spiralizer
  • 1 1/2 tablespoons of minced garlic
  • cherry tomatoes, chopped
  • 1 cup chicken broth (or vegetable broth if vegetarian)
  • 2 tablespoons flour
  • 1 cup milk
  • 2 tablespoons cream cheese
  • pepper
  • parmesan cheese

Run your zucchini through your spiralizer and set aside.

In a pot, heat up the 1 tablespoon of the minced garlic and the cherry tomatoes. Saute for 3-5 minutes. When that’s done, add in the broth and zucchini noodles. Bring it to a boil and simmer for 5-10 minutes. Drain.

Put the pan back on the heat and add in 1/2 teaspoon of minced garlic, and top with flour. Add in the milk and cream cheese. Stir until it starts getting thicker.

Put in a bowl and top with parmesan cheese!
