Yummy! You can really add whatever you want, but I made these jalapeno potato fritters with hashbrowns, onions, cheese and bacon.. They turned out really well!
What you’ll need:
2/3 package of potato hashbrowns (thawed)
1/2 onion chopped finely
1 handful of grated cheese
1 teaspoon salt
Dump your hashbrowns, onions, cheese and bacon in a bowl. Add salt and eggs. Mix thoroughly.
Take a small handful and put it on a cookie sheet with parchment paper. Press it down and make a little patty. Better to make it on the cookie sheet than in your hands as its really sticky.
Bake at 375 for 20 minutes. Turn over and bake again until the bottom is crispy.
Top with a some chopped jalapeno peppers and ranch dressing!
