CANADA DAY ICE CREAM!

Canada Day is just around the corner, so time to bust out the red and white treats to celebrate our countrys 150th birthday! Whats better than an ice cream on a super hot holiday? NOTHING. So we’re making keto no churn ice cream!

The first thing we gotta decide is.. the taste! Obviously maple would be the best option since we Canucks love our maple syrup – but second to that, we LOVE to drink Tim Hortons coffee. So this delicious ice cream will be coffee flavour.

What you’ll need:

  • 3 eggs
  • Dash of apple cider vinegar
  • 1 cup cream
  • 1 tbsp instant espresso/coffee
  • 1 tsp sugar substitute (I used xylitol)
  • Dash of vodka

So the first thing you’re going to want to do is separate your 3 eggs. Put the yolks & whites into separate bowls. Add a dash of apple cider vinegar to your egg whites.

Using a hand or stand mixer, beat the eggs until they reach stiff peaks.. Set it aside.

Dump your cream, coffee and sugar sub into another separate bowl. Beat those with a hand or stand mixer until you have stiff peaks. Slowly pour your egg whites into the cream, softly stirring while you mix them together.

Add the vodka to your egg yolks. Beat them lightly to mix together, then slowly mix that into your cream & egg white mix.

Since it’s Canada Day, we’re going to do briiiight red ice cream. Add in your colour and slowly stir it in to mix. If you want to do blue & red for the 4th of July, separate your ice cream mixture into two separate bowls, then add blue and red colouring to each.

Pour your ice cream mix into a loaf pan or tupperware container.

Freeze for at least 4 hours before serving.
