Who loves muffins!? I DO!. I really like chocolate ones, however, I figured today I’m going to make a hearty delicious cauliflower muffin. You’d think that it wouldn’t turn out very great, but I really liked these!

They are super great to eat on-the-go!

What you’ll need:

  • 1 1/2 cups cauliflower rice (put cauliflower into blender/food processor)
  • 1 cup chopped broccoli
  • 1/4 cup almond flour
  • 1/2 tsp baking powder
  • 1 tsp oregano
  • 1 tsp paprika
  • 1 tsp parsley
  • 1 tsp minced onion
  • 1 garlic clove, minced
  • 3/4 cup shredded cheddar cheese
  • 2 eggs
  • salt/pepper

After you put your cauliflower and broccoli through the food processor or blender, dump them and allllll your ingredients into a large bowl.

Mix thoroughly with a spoon.

Line a muffin pan with paper or tin cups. Fill up the pan with your sweet sweet mixture.

Bake at 350 for 35 minutes!

    Hey, thanks for another great recipe… have you tried freezing these? Wondering if they’d do ok

      Unfortunately I haven’t tried freezing them, but I think they should be ok! Let me know how it turns out if you do!
