Keto Upside Down Pizza

You may have seen the viral food video… a delicious pizza made in a clay pot, then flipped upside down so the cheese oozes around it. SO GOOD. It definitely looks amazing. So of course I had to try my hand at it with a keto version.

What you’ll need:

  • 1/4 cup almond flour
  • 1/2 cup shredded cheese
  • 2 tbsp cream cheese
  • slices of cheese (mozzrella is best, I used provolone & monteray jack)
  • your favourite toppings!
  • Butter

So I used a soup bowl for this, the kind that has a handle. Take your butter and rub it allll around the inside, greasing up the bowl. You want to make sure you do this so the cheese doesn’t burn.

Start layering your cheese on the bottom and sides of the bowl. For this recipe, I used pepperoni and layered it on top of the cheese, followed by 3 cherry peppers & green onions. Set the bowl aside.

In a separate bowl, microwave your shredded cheese & cream cheese until it has melted. Stir it all together. Mix in your almond flour until it forms a dough.

Lay your dough on a piece of parchment paper and use your hands to flatten and make a round pizza crust shape the size of your bowl.

Place the dough on top of your toppings, tucking in the sides so they don’t hang over the bowl. (otherwise it will just fall and burn on the oven)

Throw your bowl into the oven at 350 for 45 minutes.

WHen it’s done, take it out and basically DUMP it onto a plate. It will ooze out and look AHMAZING.

The only thing I forgot about this recipe was the sauce… Since i forgot, I topped the pizza with sauce afterwards. YUM.
