One of my new found favourite chicken recipes! The cherry peppers give it a nice sweet and spicy taste, but without all the major carbs of sugar!
What you’ll need:
Dry off your chicken thighs with a paper towel, this will make them much easier to handle.
Using a mallet or something similar, flatten the chicken. This makes it easier to roll.
Put 1/2 tsp of the cream cheese onto the chicken, followed by some of the chopped peppers, then the other 1/2 tsp of the cream cheese and MORE peppers. Easy peasy!
Roll the chicken like a pinwheel and secure with a tooth pick.
‘Continue on with the rest of the chicken.
Bake at 350 for 45 minutes!
