The Hungry Elephant

Canadian Thanksgiving is over but I decided to try my hand at some keto stuffing that .I could post in time for American Thanksgiving.. and I’m so glad to report, I have a great recipe!

Now this stuffing is based on a 3-4lb bird. So if your turkey is 12lbs, you may want to triple the recipe 🙂

What you’ll need:

  • 1 cup almond flour
  • 1 tbsp sage
  • 1 tbsp celery seeds
  • 1 tbsp parsley
  • 1 tsp marjoram
  • 1 tsp nutmeg
  • 1 tbsp thyme
  • 1 tbsp oregano
  • 1 tbsp rosemary
  • 2 tbsp minced onion
  • salt/pepper
  • 2 eggs

In a bowl, mix your almond flour and spices. Stir in your eggs until it is all mixed thoroughly.

Stuff your bird and bake! The timing depends on the size of the bird, but mine was 4lbs and I cooked it for 1 hour and 30 minutes.

If you have a 12lb bird – here is the recipe:

  • 3 cups almond flour

    I would just like to make the stuffing on the side in a separate dish, do I need to add broth to it?

      Hi Tammy! Yes, I would add some broth to it to keep the moisture. Maybe start with 1/4 cup and check on it to make sure it didnt suck up a lot of the broth.
