Keto Coconut Crepes

by hungryelephant

Dannnng I havent had a good crepe in a while… but these were worth it! Delish and super easy to make.

This recipe calls for 16 egg whites, but I didnt want to have 16 leftover yolks (although, if you do, make some creme brulee!).. so I used the cartons of egg whites that you can purchase in the store.

What you’ll need:

  • 1/2 cup coconut flour
  • 1 tsp baking powder
  • 3/4 cup coconut milk or heavy cream
  • 1 1/2 cups egg whites (approx 16 eggs)

In a bowl, whisk all the ingredients together until smooth.

Let it sit for roughly 10 minutes so the coconut flour soaks up the liquid.. It should be a teeny bit thick but not thick like pancake batter.

Pour some into a GREASED or non stick pan and swirl it so the batter forms a circle on the pan.

Let it sit on medium low. Once the crepe is easy to lift without breaking, then you can flip it.. but if you start to lift it and it starts to break.. hold on and cook a little longer..

Watch out though, cause it could burn!

Top with your favourite things! I used some blackberries and custard!

Enjoy!

Love the website! Thank you for bringing quality content all the time, I always check back but I haven’t commented yet… I’d like to ask though: how many crepes did you get out of this? Just the two we can see in the video?
I’m definitely saving this recipe for later either way 🙂 (I love your personality btw, you always brighten up my day 🙂 )

Yes! My apologies – I have changed the word. I did use egg WHITES and they were store bought carton ones.. NOT yolks. Hope that helps!
