CREPE CAKE!! Need I say more? The crepes are fluffy, delicious and sweet.. paired with the vanilla pudding. Even better… best part of this, is that it is SUGAR FREE!

What you’ll need:

CREPES:

  • 1/2 cup coconut flour
  • 1 tsp baking powder
  • 3/4 cup coconut milk or heavy cream
  • 1 1/2 cups egg whites (approx 16 eggs)

PUDDING:

  • Sugar-free pudding mix
  • 2 cups cream (for the pudding)

Make the pudding first as per the directions on the package.

In a bowl, whisk all the crepe ingredients together until smooth.

Let it sit for roughly 10 minutes so the coconut flour soaks up the liquid.. It should be a teeny bit thick but not thick like pancake batter.

Pour some into a GREASED or non stick pan and swirl it so the batter forms a circle on the pan.

Let it sit on medium low. Once the crepe is easy to lift without breaking, then you can flip it.. but if you start to lift it and it starts to break.. hold on and cook a little longer..

Watch out though, cause it could burn! Make the rest of the crepes.

On a plate or cake dish, put a small dollop of the pudding so that the crepes wont move.

Place a crepe ontop of the pudding, then spread some pudding on top of the crepe. Repeat until all but one crepe is used.

Crumble up the last crepe and place the bits onto the top of the cake. Top with some strawberries and blueberries!

Enjoy! This makes roughly 10 slices!
