Low Carb Coconut Carrot Curry Soup

Ok so it’s STILL snowing here and it’s SPRING. So because it was still cold out, I needed to make something yummy and warm to keep myself nice and cozy.

Now some people believe it’s not keto to eat carrots – I’m not usually a ‘if it fits your macros’ kinda gal – but I keep carrots in my diet within moderation. (Other low-carb sites such as Ruled.Me also use carrots)

So if you don’t wan to use carrots, you can replace it perhaps with some ginger for a nice ginger coconut curry soup instead!

What you will need:

  • 1 tbsp minced garlic
  • 3 carrots, chopped
  • 1/2 onion, chopped
  • 1 cup vegetable broth
  • 1 can coconut milk
  • 4 tbsp yellow curry paste
  • 1 tbsp cayenne pepper

Combine all your ingredients (except the cayenne pepper) into a blender and puree until nice and smooth.

Transfer to a pot and cook on medium until hot. Add in some cayenne pepper and pour into a bowl.

Top with some coconut cream if you have any and enjoy! This makes roughly 8 servings.
