Fall is just around the corner and so is cold and flu season. You bet we’ll have to keep our electrolytes up to warn off both regular colds and keto flu.. The staple of sick season is chicken noodle soup – so I made a keto version with konjac penne noodles. NO regrets – it tasted just like the full wheat version!

One thing about this recipe is that it lacks FAT. So I would recommend pairing this soup with fathead flatbread or shiitake bacon & crispy avocado.

Oh – and so some people have been saying that they hate the taste of konjac noodles.. but for this recipe, I rinsed the CRAP outta them and then boiled them in the chicken broth for about 30 minutes.. it definitely helps and there was NO awful taste to them at all!

What you’ll need:

  • 3 squeezes lemon juice
  • 1 cup (130g) diced carrots
  • 1 cup (120g) chopped onions
  • 1 cup (110g) chopped celery
  • 1 tsp parsley
  • 3 garlic cloves – minced
  • 3 1/4 cups (800ml) chicken broth
  • 2 (200g) cooked chicken breasts – shredded
  • 1 pkg (270g) konjac noodles
  • salt and pepper

With the exception of the shredded chicken, place all your ingredients into a deep pot and bring to a boil.

Pour in your chicken. Cover the pot and simmer on medium for 30 minutes.

Serve! This makes 4 servings.
