If you’re in the UK/Europe and everyone is enjoying pumpkin spice everything but you cant find pumpkin, well I GOT YOUR BACK.

These tasty treats taste like pumpkin spice – but without the pumpkin! It has hints of caramel, toffee and delicious cinnamon! Dont forget to top everything with delicious cocoa powder!

One thing I will mention – if you are using ‘skinny syrups’ instead of flavours or extracts, use TWO tablespoons instead of one.

What you will need:

PANCAKES & MUFFINS:

  • 1/4 cup (50g) sugar substitute (I used erythritol)
  • 1/4 cup (58g) sour cream
  • 1/2 cup (100g) melted butter
  • 1 tbsp caramel flavouring
  • 1 tbsp toffee flavouring
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • 3 eggs
  • 2 cups (200g) almond flour
  • 1 tsp baking powder

In a mixing bowl, mix all your wet ingredients together. Whisk in your spices.

Dump in your almond flour and baking powder and stir together.

FOR MUFFINS: Pour into a lined muffin tin and bake at 350°F/175°C for 30 minutes.

FOR PANCAKES: melt 1 tbsp of butter on a non stick pan. Place a scoop of pancake batter onto the pan and cook on medium. Once you can see bubbles popping up from the pancake, flip it over and cook for an additional 2-3 minutes.

LATTE:

  • 1/2 cup (118ml) of coffee (or 2 espresso shots)
  • 3/4 cup (177ml) heavy cream or almond milk – HOT
  • 1 tsp caramel flavouring
  • 1 tsp toffee flavouring
  • 1/8th tsp cinnamon
  • pinch of nutmeg
  • pinch ginger
  • 1 tbsp sugar substitute

In a cup, stir together your coffee, sugar substitute, spices, and flavourings. Once your cream or almond milk is nice and hot, pour into the coffee mixture. Top with any foam and some cocoa powder!

FRAPPUCCINO!

  • 1/2 cup (118ml) heavy cream or almond milk
  • 1 full glass of ice
  • 1 tsp caramel flavouring
  • 1 tsp toffee flavouring
  • 1/8th tsp cinnamon
  • pinch of nutmeg
  • pinch ginger
  • 1/4 tsp xanthan gum
  • 2 tbsp sugar substitute

Place all the ingredients into a blender and blend until smooth.
Pour into a glass and enjoy!
