Keto Blueberry Pound Cake

Last week I made a raspberry lemon pound cake and it was delicious! This time I thought I’d try to make a keto blueberry pound cake!

The recipe is fairly simple – all you need to do is mix the ingredients together and bake!

Now I used a yummy cake batter flavouring alongside a traditional vanilla extract and it was perfection BUT you don’t need it. If you don’t have it, you can leave it out or replace it with lemon extract! That would be equally as delicious.

I used frozen blueberries for this blueberry pound cake and let them thaw before adding them to the batter. However, you’ll notice in the video – I added some blueberry juice from the fruit – this was unintentional. I meant to add the blueberries, but forgot that some liquid from the thawing was at the bottom so I ended up pouring in the liquid by accident.

 

 

Again, that liquid is optional – you can leave it out. I don’t think it added to the flavour profile at all.

Keto Blueberry Pound Cake

Prep Time: 10 minutes
Cook Time: 45 minutes
Total Time: 55 minutes

Ingredients

Instructions

  1. In a mixing bowl, whisk together the dry ingredients.
  2. Stir in the wet ingredients except the blueberries.
  3. Once the batter is completely mixed, add in the blueberries.
  4. Pour into a loaf tin (I used 9x5)
  5. Bake at 350°F / 175°C for 45-50 minutes.
  6. Let cool completely before cutting.

Notes

This makes around 12 slices.

I was looking for a keto lemon blueberry cake recipe and wasted an indecisive hour trying to find a quick easy recipe. Ran out of time – it was now or never and have no dessert after dinner. Landed on your blueberry pound cake recipe; added the zest of one lemon, 2 T fresh lemon juice. I subbed 1/4 whey protein powder for 1/4 cup of almond flour to reduce the amount of almond I eat. Because of the extra liquid from the lemon juice, I threw in `1 T coconut flour. (I also like the texture boost a little coconut flour adds)

We loved it!!! We’ll be making this often as it’s a one bowl, fast, easy and fulfilling desert. It will be easy to change it up and make a raspberry or cranberry (be sure to chop the cranberries) cake, or chocolate chip (minus the lemon I added)

It will be great for breakfast with sausages too.

Delicious! Couldn’t wait for it to cool completely, LOL, and excellent warm with no ill effects! I started smelling it heavily after 35 minutes, though, and it was getting very brown on the top. Checked it with toothpick and it was done. 10 more minutes would have killed it. I used the loaf pan indicated and baked at 350 F.
