Coconut Flour Pound Cake – Keto & Low Carb!

After uploading my last video that had 5 of the best keto pound cakes – I was asked to create a pound cake with coconut flour – so here we are! A coconut flour pound cake that is 100% keto friendly!

This took me a few (or three) tries to get right to be honest. The first cake I made was flat, the second was too eggy but this one is just perfect. It’s not eggy at all!

Now when you make this pound cake, make sure to use aluminum free baking powder – I say this because if you don’t, your cake may turn purple or green. It’s still safe to eat but it’s just because the aluminum reacts with the coconut flour.

Other than that – this recipe is fairly simple. Just mix the ingredients together, pour into a tin and bake!

If you want to make it dairy free – it’s pretty easy – replace the sour cream with coconut yogurt and the butter with melted coconut oil.

Coconut Flour Pound Cake

Prep Time: 10 minutes
Cook Time: 35 minutes
Total Time: 45 minutes

This coconut flour pound cake is the perfect dessert! No eggy taste and can easily be made dairy free!

Ingredients

Instructions

  1. In a mixing bowl, whisk together the dry ingredients.
  2. Add in the wet ingredients and stir until it is mixed thoroughly.
  3. Pour into a lined loaf tin.
  4. Bake at 350°F / 180°C for 35-40 minutes or until a toothpick comes out clean.
  5. Enjoy with your favourite glaze!

sour cream can be replaced with yogurt and coconut milk can be replaced with cream or another nut milk!
