Low Carb Ice Cream Sandwich

A low carb ice cream sandwich is the best cool-down treat for the hot summer weather and these ones are so easy to make!

For this recipe, I made an oat fibre based waffle but you can also make one that has a base of protein powder and the carbs will still be fairly low. We want to make sure the carbs aren’t super high on the waffle to leave room for the ice cream.

Speaking of ice cream, I used Halo Top for this delicious treat but you can use any other low-sugar / low carb ice cream that you like. There are a few keto brands as well that have no added sugars but when I went shopping – Halo Top was the only one that had around 10 net carbs per 3/4 cup. Everything else was higher. (again – not sponsored)

Low Carb Ice Cream Sandwich

Prep Time: 20 minutes
Freeze Time: 1 hour
Total Time: 1 hour 20 minutes

Summer time means nice cold treats and these low carb ice cream sandwiches are the perfect snack! Gluten and grain free. Only 4.7 net carbs per sandwich!

Ingredients

Instructions

Mix all the ingredients, except the ice cream, together in a bowl.

Place the waffle batter onto a greased waffle iron.

Cook until slightly brown and easily removed.

Separate the waffles and cool, then freeze for a minimum of 1 hour.

When ready to make the sandwich, place approx two tbsp/scoops of ice cream onto one waffle.

Place another waffle on top.

Add any other ingredients you want, like sugar free sprinkles!

And enjoy!

Notes

This makes 3 waffle sandwiches (if you are using a 4-waffle iron)
