These keto churros use ground almonds and protein powder as the flour. The protein power allows the dough to expand when frying, making it nice and fluffy.
Eggs, olive oil and water are the only liquids in this keto churros recipe. The eggs hold it together allowing it have the same consistency as gluten churros.
When frying, you'll want to place the dough into a piping bag. This will give you the proper churro shape. I recommend a star piping nozzle as well!
Make sure to use an oil that has a high smoke point. I prefer to use tallow or lard! A low smoke point will easily start a fire so beware!
