Fried mozzarella is my new favourite thing. I knew it could easily make a pizza or even a roll up, which I HAD to try.

You can top it with anything you like!

What you’ll need:

  • 1 cup (100g) fresh mozzarella – shredded
  • 1 tbsp tomato paste
  • your favourite toppings

Place your cheese onto a non-stick pan covering the entire bottom of the pan. Cook on medium heat until the cheese has melted. It will eventually start to bubble.

With a utensil, lightly life one side of the cheese to see if it has started to brown. If it hasn’t, continue cooking.

If it has started to brown, spoon your tomato paste onto the cheese followed by your favourite pizza toppings.

Use a lifter to start rolling your cheese like a carpet until it has formed a long log.

Take off heat and serve!

This makes ONE pizza roll up.
