I promised a few subscribers that I would do some easy stovetop recipes, so my first one since forever is a deeeelicious shrimp scampi! Let me tell you, this tasted just as delicious as it smelt. There’s something about cooking shrimp with garlic that makes your home smell tasty.
For this low carb shrimp scampi recipe, I used shirataki noodles. You don’t have to use them, you can sub with zoodles or miracle noodles! It took me a while to find the shirataki noodles tho.. In Canada, specially Ontario, I found them in the tofu section of my local Sobeys. I just happened to pass them by one day and realized I had been searching for them for MONTHS.
What you’ll need:
- 1 package peeled uncooked shrimp (i used about 500g)
- 2 packages of shirataki noodles (226g package each)
- 4 cloves of garlic, minced
- 2 tbsp olive oil
- splash of white wine vinegar
- 1 tbsp water
- lemon juice
In a pan, heat up your garlic on medium. Add in your olive oil, spices, white wine vinegar and water. Stir, then drop in your uncooked shrimp.
Saute on medium until your shrimp is cooked (it varies, but if your shrimp turns a red/orangey colour, it’s done)
Sprinkle some lemon juice over your shrimp. Toss in your drained and rinsed shirataki noodles, making sure that they are all covered with the sauce and shrimp. Leave it on the stove for about another 5 minutes until the noodles are hot hot hot!
Serve with some parmesan cheese!
