Who doesn’t love a quesadilla? It’s cheesy, crunchy and just pure deliciousness. So today I am showing you how I make my favourite keto quesadillas!
So for this recipe, I used Mama Lupe’s low-carb tortillas which are my FAVOURITE. Ive also used La Tortilla Factory tortillas which are also delicious (and bigger). Both of these can be found on Amazon, or if you’re in Canada, Mama Lupes can be bought from The Low Carb Grocery and the LTF ones can be found at a Sobeys brand grocery store.
IF you can’t find any low carb tortillas, I recommend making some fathead dough and rolling it fairly thin. You can use a bowl to make a circle and use that as your tortilla.
OR, like in the attached video, you can try to use cheese! I’d cover the bottom of a non-stick pan in cheese, cook on low/medium-low until the bottom has browned, add your toppings and then flip one side over the other!
All in all, this is one of my go-to easy recipes. It takes under 10 minutes and barely any mess. Plus you only need to clean the pan!

My favourite ways to make keto quesadillas! These are the perfect lunch time meal that is SO easy to make and takes less than 10 minutes!
- 1-2 low carb tortillas
- your favourite toppings
- 1 cup (100g) shredded cheese
Cover the bottom of a non-stick pan with the cheese.
Heat on low/medium low until the cheese has browned on the bottom.
Place your toppings on one half of the cheese.
Flip the cheese that has no toppings onto the side with the toppings.
Place a tortilla on the pan to brown the underside.
Place the cheese/toppings mix on one side of the tortilla and fold the tortilla in half to a moon shape.
Heat and brown each side.
Cut a slit in a tortilla from the centre to the outside of the tortilla.
Place the tortilla in a non stick pan over medium low.
Add your fillings to each quadrant of the tortilla.
Starting from one of your cut corners, fold each corner in so each filling has its own little pocket
Press down with a spatula to flatten it out a little and brown the bottom.
Flip and brown the other side,
The traditional way a tortilla is made.
Place tortilla in a non-stick pan on medium-low.
Spread your cheese and toppings over the tortilla.
Place a second tortilla on top.
Press down with a spatula and brown the underside
Flip and brown the other side.
Take off heat, cut into 4 and enjoy!
